tender. The marbling process is incomplete, making the meat not as fresh
tasting. Chilled meat on the other hand, has yellowish fat all around it,
meaning that with proper aging, it has sucked up all the juices making it not
only taste better, but even look and smell better. Marbling is the tell-tale
sign of how fresh, juicy, and tender the meat will be.
